All potentially hazardous foods must be cooked to 165F and held at 140F. Previously cooked then cooled PHF's must be held at 40F or below. Cheeseburgers placed back in oven and chicken salad discarded. (750.210) All PHF's temperatures must be checked before placing in warmers. Warmers are not to be used for heating PHF's.
